When Life Gives You Kiwi’s … Make a Kiwi Dessert!
Plant-Based, Not Over-The-Top Sweet, and Oh, So Good!
So. Life’s been happening. A trip to Colorado to get ready for my mom’s estate sale. A trip to Vegas for a bucket-list concert.
And in between it all, one of my favorite fruits is in the store.
Mmm … Kiwis.
My affinity for kiwis grew when my daughter did a year-long work abroad program in New Zealand after she graduated from college. I visited for a month, and fell in love with Kiwi culture.
So every time I pick up a few kiwis at the store, my mind races back to all the memories we created.
Costco has New Zealand (truly the best) kiwis on sale right now.
Yes, I’ve tried kiwis from other places. There’s something about the flavor of a New Zealand kiwi. They’re in season right now. They’re so good.
And we might have ended up with more than one box of kiwis in the cart. (How did that happen!?)
What to make …
Why not a simple Kiwi Tart?
Kiwi Tart
Ingredients:
Crust:
½ cup coconut oil, melted
1 ¾ cups oats
⅔ cup coconut flakes
½ cup powdered sugar
Filling:
3 cups kiwi, peeled and chopped
2 cups oat milk
¼ cup Maple syrup
¼ cup arrowroot
Optional: green food coloring
Directions:
Melt the coconut oil.
Mix the oats, coconut flakes, and powdered sugar together. Add melted coconut oil and mix well.
Spray or grease a tart of pie tin. Press the oat mixture evenly on the bottom and sides of the tin.
Peel the kiwis and puree them together with the oat milk and maple syrup. Mix in the arrowroot powder until it dissolves.
Place the kiwi mixture in a saucepan over medium heat and bring to a boil while stirring. Stir until it’s thick and creamy.
Remove from the heat and let it cool for a few minutes. It should solidify more as it cools. Spread it evenly across the crust for a smooth surface.
Chill. Once cool, decorate the top as you please. Use coconut flakes, kiwis, berries, chocolate, or seeds. You can remove it from the pie tin if you’ve used one with a removable bottom.
